4 Small to medium sized chicken breasts, boneless/skinless
6 Slices of Swiss cheese
4 Slices prosciutto
1 Tbsp olive oil
1/2 Cup Italian seasoned bread crumbs
Preheat oven or smoker to 350 deg
Lay out thin layer of bread crumbs on cutting mat
Butterfly each breast by cutting horizontally but not all the way through.
Lay plastic wrap on top of breast
Pound each chicken breast with a mallet or cast iron pan so that it’s about 1/4 inch thick.
Lay 1 piece of prosciutto and 1 slice of swiss cheese onto each breast and roll up.
Brush each breast with olive oil and roll in bread crumbs.
Place into casserole dish or pan and place in oven or smoker for 35 minutes or until internal temperature reaches 165 degrees F.
After temp reaches 165 Deg, lay 1/2 slice of cheese on each breast and return to oven or smoker for 3 minutes or until melted.
Did this one in the oven. This was really good.
